3 overripe banana mashed
1/2 cup vegetable oil
2 cups self-rising flour
3/4 cup sugar
2 tsp vanilla extract
2 eggs slightly beaten
Chocolate chips (Optional)
- Mix bananas, oil, vanilla, and eggs in a large mixing bowl. In another bowl, mix sugar and flour.
- Add half of the flour mixture to the banana mixture. After the flour has been incorporated, add the rest of the flour. Mix until combined. Do not over mix. (Add chocolate chips at this point)
- Fill greased mini muffin molds 3/4ths of the way. Bake in a pre-heated 325 degree oven for 25-30 minutes or until golden brown. Cool and serve.
-If baking in a loaf pan, bake mixture for 1 hour until golden brown.
-Muffins are best when they are slightly warm.
-Leave some chunky banana pieces for some texture.
